In 2021 we set up a small kitchen in the back of a Vienna gas station and started cooking the Punjabi food we grew up on. No dining room. No big sign. Just really good food.
One person tried it. They told a friend. Now people drive in from all over Northern Virginia for a plate of chaat. That is how we got our name. Chit Chaat means a little chit-chat over a plate of chaat, and it still happens here every day.
